This recipe is the union of two very naughty things: waffle fries and nachos. Fret not, the two evils combine for a guilt-free meal. I use Alexis brand sweet potato waffle fries as chips and then pile on the good stuff. Here’s what I use, but you may have your own favorite nacho toppings. Go crazy. The waffle fry is the vehicle for your dreams.
Alexis Waffle Fries (or another all-natural brand)
1 lb. browned ground meat (I used venison) drained and seasoned to your liking
1 can Ro-Tel tomatoes with lime and cilantro
½ cup cilantro, finely chopped
½ cup green onion, finely chopped
1 avocado, sliced
1 - 7 oz. container plain Greek yogurt
Let the waffle fries get a head start in a preheated oven. Set to package instructions. Once the fries are tender and crispy, pull them out and top with the meat, tomatoes, green onion and squirt of lime juice. Place back in the oven for 5-10 minutes. This warms the tomatoes, finishes crisping the fries, and lets everything get to know one another.
Pull out and let cool for just a few minutes. Serve with cilantro, Greek yogurt, avocado slices, and lime wedges.
